New egg owner here. First time with strips. Cooking direct - what temp should my dome read? Any other suggestions? Using Dizzy Pig "Raising the Steaks."

    how thick?

I hate it when I go to the kitchen for food and all I find are ingredients!

that's why I asked how thick. if they are 1.5" or thicker, yeah, trex. otherwise, maybe 400-450° without a sear. or, if you like rare, a little hotter and JUST a sear. my 2¢.

Totally agree, just didn't have time to go into the hot tub, t-rex, direct discussion. t-rex is a great place to start for us newbies... forgot to mention the Thermapen...

OK, great. Got the T-Rex up and running. And I have a Thermapen - just arrived this week. Used it last night for burgers.

This forum is great! Can't wait to see how this turns out. Thanks so much for the help.
