Crown Pork Roast

Remember the Crown Pork roasts you used to get? Usually around Christmas. I want to have my butcher set one up for me & try it on the Egg. Anybody have a recipe or thoughts? As I remember, you used to stuff the center with dressing & roast it in the oven.

Do it just like you did in the oven except apply your favorite rub and stuff with sausage. I overstuffed my first one and by the time the sausage was done the exterior of the crown roast was overdone, but surprisingly moist and still real good.

If you partially or fully cook your stuffing (especially if it has meat in it) then you can add it toward the end of your roast cook.
