First Steak

Well, I cooked my first steaks on the egg tonight. Bought 3 1 1/2 inch bone in New Yorks. After I got home at 8pm from umpiring a baseball game with one of my buddies who was also bachloring it tonight. I cleaned the ash, added some more lump and put fired it up. I then went in and rubbed them down with Dizzy Pig Cow lick and EVOO. Put the cast iron skilit on the grate. Went back in and took the outside of the onion off, sliced it most of the way through and put some butter on it, wrapped in foil and put it next to the skillet. When the temp hit 750, I threw one chunk of apple on the fire and put the steaks in the pan. Seared 90 secs on each side. I removed them from the pan and put the top on. 20 mins later, I removed the onion, and put them back on about 400 at the time. Left it all closed up for 20 more minutes. I know this is TRex or very close to it, but I have to say it was absolutely the best steak either my buddy or I have ever eaten, and the onion was the perfect complement to the meal. Sorry no pics, but it was late and we were hungry.[p]thanks to everyone for the great ideas I have been reading the last month as I have waited for my egg to arrive.
