Am going to be doing a Prime Rib saturday evening and am planning on using the 500 to 350 method of cooking it.
But my question is , How long will the total cooking time be?
And at what internal temp do I pull it off at ?
Thanks a million:
M

<p />Smok'in CSI,[p]How big is the prime rib you're cooking, i.e., how many bones? I would pull it at about 130-135 internal if you like the rare side of medium rare.[p]There's some info and pics and the link below on how I've done these in the past - I hope you find this helpful.[p]Mad Max also has some great prime rib tutorials, and I'm sure he'll chime in soon.[p]Good luck,[p]TRex

    Smok'in CSI,
Time will be influenced by whether it is bone on. Also, the size--I did a five pounder (no bone) Sunday. Pulled at 135. Took about 85 minutes. I think my larger bone on have done about 20 minutes/pound. Actually wish I pulled at 130, maybe even 125. The guests loved it, but I would have preferred a little more on the rare side. Keep your eye on it cause once these guys hit about 90 they jump up in temp real fast.

  • Smok'in CSI,
here is a link to how i do mine (going from 500 down to 325). . ..if its a bone in roast, figure about 15 minutes per pound to hit medium rare/rare . . .like others have said, pull it when its 5 - 10 degrees below your target temp as temps will continue to rise while its resting under aluminum foil . ...HTH
