First Time Beef Spar Ribs

I picked up some layered beef spare ribs from Sams yesturday. I have never cooked them and it seems they are not overly popular. I rubbed them with a blend of brown sugar, cumin, chilli powder, celery seed, crushed balck pepper, kosher salt, garlic powder and paprika. I plan on egging with plate setter and grate with a water tray. Shooting for temp of 250 and guessing about five hours or 190 degrees. I plan on saucing these about the last 30 mins to an hour.

What you think?
