Dripping Springs Cook-off Results

<p />Well, the weather cooperated, but our briskets did not place. They only rank the top 10 entries at the Founders Day Cook-off.[p]On a positive note, my chicken came in 5th out of 120, and that's up from 8th last year. I slow cooked chicken thighs with Tsunami Spin with finishing sauce during the last 5 minutes. Thanks WooDogs & Nature Boy.[p]Chubby came up from Cypress, Texas and stopped in Burton to pick up some ribs, sausage & jerky for us. Man, their jalapeno sausage is great when slow smoked with hickory on a raised grill.[p]Chubby also brought some of his latest inventions to show off. I'm glad to say I'm his first customer for his "Grate Mates" for the small BGE. Those things rock![p]Mrs. GrillMeister picked up a "Camp Kitchen" at Sam's Club for $72 and it is the slickest thing for cook-offs. We'll be bringing it out to the Texas Eggfest. It'll go great with the Eggfest Sink that Spring Chicken has put together.[p]We had lots of folks come by and wonder about them "Green Things", but they were amazed when they tasted our brisket, chicken, ribs, sausage, & fajitas. We'll probably pick up a few more folks for the Texas Eggfest from this and a couple more demo eggs as well.[p]All in all, while it's still a blast to compete with Big Green Eggs.[p]Next year, I'm going back to my Chipotle rub for my brisket.[p]Cheers,[p]GrillMeister

    Looks like you guys had a good time. I will be entering my first competition in May in Huntsville. Our Team, the Grateful Pigs are hoping for the best. Any advice out there from any team is surely welcome.

    Yeah baby! 5th of 120?? Dang. Funny thing, and seriously, I am doing a bird now with Tsunami. And I flipped the bird and licked my finger and said to my wife.... we need to go back to Tsunami in the comp instead of Raging River. True story. Just happened 5 minutes ago.[p]A hearty congrats to you.

    Congratulations! Looks like you were really promoting the Egg with your setup and different food items. Chubby Skywalker called today to tell me about it. Said he had to leave before the results were in but you did us Eggheads proud.[p]The "Camp Kitchen" also got my attention the last time I was in Sam's Club and I bought one. Cool idea. Took all of about a minute to set it up. I'll bring mine to the Texas Eggfest for sure, along with the kitchen sink and some dead critter parts to cook on the Egg. Can't wait.[p]Spring Chicken

    <p />RRP,[p]Here's a view. It has 3 prep surfaces that can be covered real easy with a sheet of heavy duty aluminium foil. [p]The green thing is the "Pantry" which has two shelves for stuff and it zips closed.

    Nature Boy,[p]Thanks Mang! Last year, I did two briskets and one placed 2nd out of 110 entries, but I don't know which one. I'm guessing now that it was the Chipotle & Turbinado Sugar rub. Richard did the other brisket. As a team we each had an entry into each catagory.[p]Since they only rank the top 10, we won't know. It was not a sanctioned event and pork seemed to be wide open. We did ribs and I think they turned out great![p]Oh well, you never know about the judges. I think they liked spicy stuff this year.[p]Cheers,[p]GM

    Here's a photo of the lable on the carry case. Actually, its pretty neat. The dark area in the center is a canvas storage area that folds flat when not in use. The poles and upper shelf are the only things that need adding to the main unit which unfolds in about two seconds.[p]I didn't seen any listed at any Sam's outlets when I searched. All I got was a "sold out." I happen to know the Woodlands store has more on the floor.[p]Hope you can see the photo clearly.[p]Spring Chicken

  • Squeeze, relax and don't worry about winning. Most folks at contest will help you get through the first one. Make friends with your neighbors and go easy on adult beverages until sat. You might go to the bbq forum and look at the archives for some presentation boxes. Take plenty of the proper lettuce. The contest rep will most likely have some photos and pointers. Later if you are hooked like most try and take DR. BBQ's competition class. Have a good time and good luck.

  • GrillMeister,explaining the GREEN THING does seem to be a big part of doing comps with an EGG. The other is explaining how you cook 16 to 24 hours to an EGG owner that has never done that. WE've had a fun time cooking on Eggs and do enjoy the results.

    Poppasam,[p]Thanks. The looks we get when we told folks our brisket went 15 hours before hitting 190 internal.....all on a single load of Wicked Good Charcoal. We still had lots left for steaks later.

    Smoked Signals,[p]Thanks.[p]We're the Lone Star Eggers. Two of the Larges are mine and the other belongs to another member of the team. He put up the banner for his local realty company since he sponsored us for the competition. He's picking up aother Large at the Texas Eggfest next month, so we'll have 4 eggs when it's just us two.     HolySmokes,[p]Yep, I guess the brisket that won last year was my Chipotle Brisket. I rubbed it down with yellow mustard, sprinkled turbinado sugar on it followed by Chipotle rub from Tom's Peppers.

    After May I will no longer be located on the jobsite, which means I'll be back in the cushy main office with normal working hours, no working weekends, and a 5-minute commute. Competition weekends will start looking a lot more doable.[p]TRex
