smoked turkey legs

juggernaut,[p]a few months ago i did an archive search on another forum looking for just that. the common response was not to bother with them. i did have a recipe that someone had posted but can't seem to locate it. they said they were pretty good. looks like i need to organize my recipe book.[p]Scott

Sure do... and they are great! The last time I did them I brined & smoked 8 legs because that is how many came in the pack I got from Sam's.[p]Make a brine; pull back the skin on the legs, soak legs in the brine for a minimum of 12 hours (I did 20 hours), rinse, pat dry & smoke indirect with apple wood (two fist sides chunks split in half) until they are done (about 185*)[p]Brine
1 gallon of water
1 cup of kosher salt
1 small jar of pickling spice (It is 1 1/2 oz jar) I use McCormicks
1/4 cup of honey[p]Bring to a boil together the first three ingredients so that the salt is disolved.
Pull of the burner, let cool to room temp and add regular honey (not orange blossom or anything like that) and wisk together[p]They end up with a very nice flavor like the turkey legs you get in Disney or at fairs & festivals.[p]Good Luck with them. Let us know how they turn out. Joe

juggernaut,[p]found the post from last year by Papa Q, Smokin Joe replied then and there was only one other recipe by Trish. Don't think Papa Q ever posted on what he tried but i thought i'ld offer this[p]Trish's recipe[p]I have tried this recipe (from Allrecipes.com)for extra turkey legs while BBQ'ing a turkey on my ceramic cooker. Pretty tasty and easy to do.
1 (2 liter) bottle lemon-lime flavored carbonated beverage
2 tablespoons sugar
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 tablespoon black pepper
1 large sweet onion, sliced
4 turkey legs
2 tablespoons honey
1 tablespoon steak seasoning [p]1 Preheat an outdoor grill for high heat, and lightly oil grate.
2 In a large pot, mix the lemon-lime flavored carbonated beverage, sugar, hot sauce, red pepper, pepper, and onion. Place the turkey legs in the mixture, and bring to a boil. Cook 30 to 45 minutes, until the turkey has reached an internal temperature of 180 degrees F (80 degrees C).
3 Remove onion slices from the mixture, and arrange on the prepared grill. Place turkey legs over the onions. Drizzle with honey, and season with steak seasoning. Cook, turning once, 20 minutes, or until a crisp browned crust has formed on the turkey legs. [p]

Last week I did some turkey thigh's. Here is my simple recipe only using two ingredients. Use a pot large enough to cover the meat in brine. Cover the bottom of the pot with Kosher salt. Add one cup of Allegro regular flavor marinade if you are familiar with this marinade, this is what they use at the Harley-Davidson bike meets. I let the thigh's soak in the cool brine about 5 hours. Get the Egg up to 350 dome temp and using hickory chips let the meat get to 170.Pull the meat off the Egg and pack it in a cooler for half hour to rest. Eat until you blow up [p]Jerry
