Check out the Good Eats episode 'Raising The Steaks'. AB has a good marinade for skirt/flank steak. I tried it last weekend for fajitas and they were great! You can find the recipe on the Food Network website:[p]TNW

I use this one a lot... I forget where I got the recipe, but it's terrific!![p]1/2 cup soy sauce
2 tablespoons brown sugar
2 tablespoons lemon juice
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon minced onion
1 teaspoon ground ginger
1/2 teaspoon black pepper
1 (1 1/2-pound) beef flank steak[p]Combine, then marinate overnight.[p]

I'm pretty sure the Whiz has done regular steak directly on the lump. The lump should be good and hot.

Yes, I have put steak directly on the coals. I get a real laugh out of this. Everyone I know who has ever tried this (including me) had something else to cook in reserve in case it didn't work out. So far, nobody has ever had to use their backup, as far as I know. Go for it. Especially with cheap meat like flank steak (ok, compared to a 2" thick ribeye....).[p]TNW
