So, I'm off today. Did alot of yard work. I'm on my own tonight, so I've got a nice NY strip to Trex, some Yukon golds to do a little galette ala Mad Maxx. Plus, thought I'd throw on some marinated chicken breasts between the sear and the dwell, so's I can Food save and freeze them for salads and such. All going according to plan--sear is done, waiting the 20 minutes, chicks on the grill-- til I pull the potatoes from the oven, turn my back then turn back and....grab the *@!##!@$% pan handle! Haven't burn't myself like that since the infamous first weekend 9/11 incident (I tend to cook complicated stuff to relief stress--giauliani bugialli cannolli recipe. But, I soldier on, put the steak back on at the appointed time, turn after 4 min. and the !@!@#$# phone rings and I can't get the person off and I lose track. but guess what? the steak came out PERFECT. The chicken breasts came out perfect! And me? My hand is done at about medium rare. [p]I love cabernet sauvignon.

    Tracy,
I hear you and share some pain from the brand on my hand from a small metal pan which was warming butter on the side last night. As for the phone interruption I don't take calls while humpty is working - kind of a "mutual respect of what you do" issue after I ruined $30 worth of lobster tails one time.

    RRP,
I know...should've known better. I just got caller id but haven't gotten used to it yet...this one coulda waited.
But, I did leave out one piece of the story--ow appply ice cube here..........
All better now.[p]At one point one of our indoor cats decided to make a break for it and, being one handed, and with the one good one occupied with a wine glass (well, yeah)--went to block. Gray kitty doused with red wine. gotta clean her off. new furniture with fur---not my fault. new furniture with red wine catprints--i'm toast [p]notice i'm typing 1 fingered now[p]

  • crkscrw,
sounds like a great evening of cooking. .. .how did your gallete turn out? . . .you need to get that second egg so you can really multi task ..meat in one egg, the galette in another. ...[p]and another battle scar to show for it. ..life is good

mad max beyond eggdome,[p]The gallette turned out okay, though it did suffer from a couple minutes inattention at the end. And I would love a second egg...I must come up with a scheme, uh...plan to get it!
