Does it matter if I put my butts on fat cap up, or fat cap down?
I usually do them fat cap up (so that it drips down through the meat), but I did one a few weeks ago that came out so greasy I had to blot the meat with a paper towel before I served it.[p]I have two big butts I have to do tonight for a party, and now I'm leery about doing them fat cap up, but I'm also leery about trying it down and having it come out dry.[p]Just looking for some friendly opinions -- thanks!

Bulldog Bob,[p]You may very well have some that believe they need to be placed one way or aother however, I don't think you could smoke/cook a butt incorrectly when it comes to the placement. I don't know that they are foolproof but, they are sure hard to screw up![p]Cheers ~[p]B o B

Sometimes I turn them on their sides for maximum butt capacity .... top, bottom, side .. doesn't matter.[p]Enjoy.

I've done 'em both ways. If you're doing it in the egg don't worry about dry; try one or both cap down. I've done my last few that way and they were great' not dry at all.
