Indiana Skeeter,
for the beef, i like chuck roasts cut from the roll, but the clod also works well from what im told. the butt section for pork yeilds a cleaner looking product, but im partial to the cheaper bone in picnic for flavor

I spent most of my money on good bourbon, and bad women...the rest, I just wasted!! -
Indiana Skeeter,[p]For beef you cant beat the chuck roast. Usually dirt cheap and they make great shredded beef.[p]For pork, as has been said, a Boston Butt is nice for good quality product without a lot of waste and you get a lot of bark. However, for more flavor I prefer the shoulder or picnic. It has more dark meat muscle which to me has more flavor in it. I rub under the skin and slice through it so the rub can penetrate, have injected as well to ensure rub penetration through the meat. Downside to a picnic or shoulder is that there is not much bark as its all skin and you remove it after the cook.[p]Good luck, any of these will give you a great finished product and you may find that your tastes differ. Indiana Skeeter,
Port - butts are the norm, shoulders (or picnic) if on sale, but I prefer the butts because they yield a nice bark when smokes.
Beef - nothing like a strip steak or rib eye seared to perfection (T-Rexed). Briskets are great, but tend to be a bit more challanging than a pork buttor picnic. If you cook the brisket long enough and keep it moist it will just fall apart - which can make a great chopped beef sandwitch. Haven't done pulled beef yet.[p]HTH... Joe

Indiana Skeeter,
I like thick cut choice chuck roast for pulled beef. Pork shoulder-Boston butt for pulled pork is great.
