Hey Mad Max....Oxtail Report

Max,[p]Did a batch of oxtails generally following your technique posted last week and they were wonderful. My only adjustments were cooling down the dutch oven and into the fridge overnight to let the fat rise and harden for removal. The next evening, I removed the fat layer (1/8" thick!) and the oxtails, reduced the broth just a little and added about 1T of stone ground mustard, returned the oxtails to warm up, then served. hey, glad it turned out so well for you too. .. .i like the idea of refrigerate, remove fat, re-heat.... cause they do give off a lot of fat in cooking. ..
