Rebirth of the Small

For the better part of two years, my Small BGE has been nonfunctional. Over the Christmas Holiday, I rebuilt it with a new hinge and SS Draft Door. I completed the ensemble with a new nest. Tonight, I was finally able to add some lump and fire it up. After I lit the egg, I looked around my BGE Cart and found a brand new grate that I had had for some years. I sprayed the grate with Grill Pam and let the egg take off.[p]I went with a simple classic, a Pork Tenderloin with Hickory Molasses Char Crust. I tied the thin end of the tenderloin back upon itself so that I was grilling an even thickness. The small was around 650 and I let the tenderloin cook for 3 minutes on three sides. I then let the small roast dwell for another four minutes.[p]When the tiny roast was resting, I grilled some asparagus for 2 minutes a side.[p]The meal was finished off with baked Yukon Gold Potatoes. [p]The meal was simple and a classic.[p]I am glad that my Small BGE is back in the family of working Eggs!
