This weekend I’m smoking 4-10 pound briskets on two large eggs. I’m also smoking 18 racks of bb ribs. My question is, after I remove the briskets to make way for the ribs how long can I keep my briskets wrapped and in the freezer waiting for the ribs to finish. I figure the ribs should take about 5 hours. Is 5 to 6 hours too long to keep the briskets on hold?[p]Thanks!

heavily wrapped in aluminum foil, and towels and tight in a cooler should keep them plenty warm for that amount of time.. . .

Ed G.,[p]That long in a cooler, wrapped up in foil and towels, will be fine. Worst case is that you take them out of the cooler, throw them back on after the ribs finish and put a bit more heat on them, still wrapped in foil. Foil and cooler the ribs for 30-40 minutes while you do that. I doubt seriously that you will have to do that though, the briskets will still be plenty hot.[p]Troy
