I made a big pot of ham and bean hearty soup today and as in the past I mixed in some leftover glaze I had. The soup has taken on a sweeter taste than I really like. Is there some way to overcome that after the fact?

    RRP,
Not positive on this, but I might try taking a tad bit of the soup in 2 spoons, adding something sour to one and salty to the other. See which version tastes less sweet. I have a feeling a little salt, and a little more vinegar or lemon juice might help you out....but in reality I am shooting from the hip.
    Cheers

    RRP,
I never heard anything that can negate sugar, if it were too salty, a couple of potatoes could pull out some salt but not sugar. I'd cook a little bean soup tomorrow and when chilled, add the 2 together, thus diluting the sugar. Whatever you do, don't mess up by adding something your not sure will work, then you'd have to throw it all away. HTH

Nature Boy and Chef Wil, I opted for more salt which I knew I had room to do and that has done the trick. Normally neither my wife or I like sweet food so I guess I'm more senstive to the taste. Part of it though too is the richness of the soup due to a large amount of ham. It's in the kick-butt ranking in our home tonight so thanks, guys!

    good to know it worked.
I was going to echo Nature Boy, but after C.Will stepped in decided to wait until you had tried it. [p]I try and avoid too much of both sweet and salt, but that usually leaves me with sour and hot. Which, actually, I've come to like just fine.

  • RRP,
Start out with a little lemon juice. The acid will cut the sugar. You will have to do several taste test. [p]Jerry

just guessing but maybe its not your ham glaze that sweetened the soup, may just be you did not have enough salt to start with.Anyhows, I'm glad you got 'er fixed and didn't have to throw anything away.
