    QBabe, noticed there were no ingreients listed for theTomato Gravy. Here is a recipe I found for Tomato Gravy that may fill in the gaps.
    Tomato Gravy
    [p]Ingredients
    1/4 cup Chopped onion; optional
    3 Tbs Bacon drippings
    1 Tbs Flour
    3 Tomatoes; peeled & chopped ..(up to 4)
    1 cup Water
    Salt & pepper; to taste



    Procedure
    1 Saute onion in bacon fat.
    2 Stir in flour and brown.
    3 Add tomatoes, with juice; stir as gravy thickens.
    4 Add water, a little at a time, and cook until gravy is of desired thickness.
    5 Salt & pepper to taste. This is also good as a casserole sauce.


    Yield: 2 to 2 1/2 cups.

    QBabe, Sorry to all! I don't know where the rest of the recipe went; however, the SECRET ingredient is "tomatoes".
    Here is the recipe in it's entirety:TOMATO GRAVY
    Saute & Deglaze with:
    2 strips thick-sliced bacon, diced
    1 cup diced onion
    1/2 cup dry red wine (I used Beringers Cabernet Sauvignon)[p]Add & simmer:
    1 can (14oz) Beef Broth
    1&1/2 cups Roma tomatoes, seeded and chopped
    1/4 cup ketchup
    2 TBSP prepared yellow mustard (not dry)
    2 TBSP brown sugar
    Saute bacon in saucepan on medium heat until crisp. Add onion and saute approx 3 min. until soft. Deglaze with wine, scraping the brown bits from bottom of pan. Reduce to almost dry, with a little liquid left.
    Add broth, tomatoes, ketchup, mustard , and brown sugar & bring to a boil. Simmer until grave is reduced to 21/2 cups, to desired consistency. The natural starch of the tomatoes thickens it, so no thickening agent is added.
    Again, many apologies for the omission. Enjoy!!

    Again, thank you Larry for putting up with Tonia's hours dedicated to the EggFest. Many thanks to you, Tonia, for all that you have done for our love and passion of cooking.[p]The book looks great![p]I spent so much time cooking this year, I really did not get to try many of the dishes. Just reading the cookbook made me realize just how much I missed![p]There are a few recipes that I will be trying sooner than later... Baked apples and the baked banana split, to name a few![p]Banker John
