Stuffed Crimini Recipe

***These are approximations....adjust per your tastes***[p]
1 1/2 lbs Crimini, Babby Bella, or Button Mushrooms (stem and
brush the bottom of each Cap with Olive oil
1 pkg Cream Cheese (softened)
3 slices Serano Ham, Sweet Coppa, Tuscan Salami (diced)
1-2 Shallots (finely diced)
2 Tblsp Flat Leaf Parsley (chopped)
4 Tblsp Itallian Bread crumbs (reserve 1/2)[p]
1) Mix the Cream Cheese, Diced Meat, Shallots, Parsley and 1/2 the Bread Crumbs.[p]2) Invert Mushrooms and spoon the above into each Cap.[p]3) Top each Cap with a little of the reserved Bread Crumbs.[p]4) Lightly brush the tops with softened sweet butter.[p]5) Dust with Smoked Paprika [p]**Cook over Medium Hot fire...8-10 minutes.(Go longer if indirect)!
**Smoke is also good!![p]

thanx again! BTW--this recipe reminds me of one from way back (before the BGE) where I used similar ingredients, but instead of the ham used chopped pepperoni. Be fun to try sometime but meanwhile, these 'shrooms look delectable.
