How do you brown the skin when roasting a whole chicken or turkey? Ours comes out bland, not crispy. Thank you.

    Holly,[p]Many methods are touted...but bumping up yout temp at the end will brown and crisp the skin. [p]Air drying the bird in the fridge (uncovered for 3 or 4 hours) will also give you a crisper skin.[p]Barbra Kafka has a great book Called " The Simple Art of Roasting"!! It's a great reference source.
    She details many different methods, not just the 375 till done you hear all the time!!
