Spatchcock chicken and raised grid

Hi,
I have two questions. One is about a term I am not familiar with. What is spatchcocked chicken and how does one prepare it? The second is about the process of raising the grid. I have seen many refernces to cooking on a raised grid. How do you go about doing this. Is there a special tool?

  • Rick,[p]For spatchcockin..you gotta visit the naked wiz's page..nobody splains it betta..but its basically a chicken what has it's backbone cut out (literally) and snapped flat down..[p]secondly..there are many ways to raise a grid..plat setters..some folks have bought a second grid and added stainles steel bolts and washer to the outside edges to make it "stand" up a few inches..gets food up away from the fire a bit more..BGE also seels a riased grid that snaps onto the large bge grid. [p]Now there's also direct raised and indirest raised. Direct is when you raise the grid but there's still nuttin tween your food and the fire, indirest raised is when you raised the grid and there'a a bariier under the food..like the plate setter or some folks use a plain ol drip pan..or some folks use firebricks...basically the fire is blocked from directly under the food and the heat from all around the dome and whatnot does the cookin..most commonly used for low and slows..but also good for just plain roastin stuff..like pork or beef roasts or even chickens and whatnot..[p]wheeeweee...that hurt..[p]TUS

    You know whizzer..you got so much usefull info there..but what's missin..is an esplanation of what the StumpBaby is..is that on accounta its just so hard to put inta words..kinda like it defies esplanation or what zactly is it ? I mean Im just worried folks just dont unnerstand..an aint no betta place to diskribe it an all..till I get mine own site runnin..which lord help us may not happin in mine lifetime anywayz..[p]StumpBaby
