Chicken and Breasts and Baked Potatoes

Hi,
Just got a large green egg today and used it to grill boneless chicken breasts and medium potatoes tonight. I found it easy to get to temp and maintain it. However, I had minimal luck with the food. I followed the recipes in the book and cooked at 300*F; the potatoes for about 1 hour and 10 minutes and the chicken breasts for 40 minutes. The potatoes were hard in the middle. The chicken tasted great but did not brown at all. What temp should I be using with each of these and for how long?

    Rick,[p]There's a post below about baked potatoes. Think of your egg as you would an oven. Whatever you normally would have cooked them at in the oven will work on the egg. I usually do mine at around 350° for 1 to 1.5 hrs, depending on the size of the potato. I usually rub with a little olive oil and sprinkle with kosher salt before baking.[p]We just did some of the best chicken breasts we've ever had the other night. Marinated them in italian dressing while the egg came up to temps and stabalized at 400°. Then sprinkled them with some Dizzypig Tsunami Spin rub and cooked them direct on a raised grid for about 10 minutes/side on the mini egg. Let them rest for about 10 minutes, then sliced and served on a big entree salad. They were outstanding! [p]Anything you need to know about how to cook with your egg, you can find out right here. Most of the recipes in the BGE cookbook are not terribly reliable, so you'll hear folks tell you to "throw out that cookbook" (but not before you've sent in your warranty card).[p]There are a ton of recipes here on the website, both under the main recipe section and also the submitted recipes section.[p]If you have any questions about a cook, toss it out here and you'll get help.[p]Welcome to the club!

  • Rick,[p]Don't feel too bad about it. And don't give up on the egg. I'm a new egger myself. It's been almost a month now. I've screwed up some food myself. However, I've some stuff really turn out nice. I'm still working on the ribs. On my old water smoker, I could cook some ribs that would make your tounge slap your brains out! I've done ribs twice now on the egg, and they haven't came out like I wanted them to yet....but I'm getting closer. It's like the first time me and my wife.......well, ya know. It takes a while to get it down, but after I did........She wants Big Daddy to cook all the time. ;-)[p]Get you a couple of Rib Eyes and TRex some steaks. You'll be happy then!
