Indirect cooking

How do you cook on the "Egg" when a recipe calls for indirect cooking,
ie: seperating the coals on a regular char grill.

    You would use something that goes between the coals and the food. It can be as simple as a drip pan, or as advanced as a plate setter, or as inventive as fire bricks and pizza stones.

    you can also use cut down coffee cans to put the extra grill on instead of firebricks or a placesetter... cut the cans to the desired height and use an opener to remove the "other" lid(bottom)...i make a pan out of aluminum foil to block the heatand catch any drippings...just toss it when you're done... or you can just rest a pizza stone on top of the cut down coffee cans...this way the heat rises evenly...not blocked by the bricks..cheaperand less messy too.. once you get started you'll develop whatever techniques that you're comfortable with.thanks! ray
