Mad Max...Oxtail Question

Max,
During your oxtail cook, was the lid of the pot on or off? I noticed in the pictures that not much liquid was lost between the start and the finish. [p]~thirdeye~

    lid stayed off the pot the whole time. . .the ceramics keep the moisture in pretty well. .. at just about 5 hours at 375 degrees dome temp, you can see exactly how much liquid was lost from the two pictures (and it probably less than that cause the meat and veggies lose some mass as well . .if you think you are losing too much liquid, just add some more chicken broth.. .[p]just as a matter of course, i rarely cover a pot in the egg. . .about the only time i do is when i'm making my pot roast style brisket, and i seal the pot really type with aluminum foil for the last two hours in order to really "steam" the meat. .. but that's the only time. .HTH

    Just wanted to double check that, I do my beans open as well, but I do cover at the beginning to get everything up to simmer temp little quicker.[p]~thirdeye~
