there was a dreadful sound that came out of the guinness keg last night, it was empty. had to choke down some bottled sam adams while in the boat catching rainbows last night.

Hate that sputtering sound! At least you were able to do a bit of fishing now that you have a big hole through the ice. Nothing like fishing right after the ice breaks--those guys usually smack what you are offering them pretty hard. If the weather cooperates we will have a bumper stripped bass (rock) spring run this year in the Chesapeake--three near-record year classes should mean we have plenty in the 40lb plus range making the run. Great catch on light line and then stuffed with crab and roasted on the egg!

what im hoping for is a tiger trout. never caught one, but a few have been recently stocked. i cant wait to get home tonight to try again. there is also an occasional salmon. ive hooked some here in the 10 pound class on an old bamboo 3 weight. just gotta love that its spring

a few years ago i brought the grill right down to the high water mark. walked out with a fly rod, hooked a nice striper and started walking to the grill while fighting the fish. picked up some rock weed and had that fish filleted and on a bed of rockweed with a margarita poured over it in minutes. gotta love fresh fish. send some of those 40 pounders up the coast

The 30 and 40 pound strippers are being caught here now...One of my employees caught one that weighted 37 pounds.

i think searing them while they were still partly frozen helped to keep them moist. they were 145-150 when i took them off the egg, also they were about .7 thick. very moist. someday going to find me a rooster and try the recipe the way it was meant to be

Speaking of Rooster's[p]A farmer has about 500 hens, but no rooster, and he wants
chicks. So, he goes down the road to the next farmer and asks
if he has a rooster that he would sell. The other farmer says,
"Yep, I've got this great rooster, named Ralph.
He'll service every chicken you got, no problem."
Well, Ralph the rooster costs $3,000.00, a lot of money, but
the farmer decides he'd be worth it. So, he buys Ralph.
The farmer takes Ralph home and sets him down in the barnyard,
but first he gave the rooster a pep talk. "I want you to pace
yourself now.
You've got a lot of chickens to service here, and you cost me a
lot of money. Consequently, I'll need you to do a good job. So,
take your time and have some fun," the farmer said, with a
chuckle.
Ralph seems to understand, so the farmer points toward the hen
house and Ralph takes off like a shot.
WHAM! Ralph nails every hen in the hen house - three or four
times, and the farmer is really shocked.
After that, the farmer hears a commotion in the duck pen and,
sure enough, Ralph is in there.
Later, the farmer sees Ralph after a flock of geese down by the
lake.
Once again - WHAM! He gets all the geese. By sunset he sees
Ralph out in the fields chasing quail and pheasants.
The farmer is distraught and worried that his expensive rooster
won't even last 24 hours. Sure enough, the farmer goes to bed
and wakes up the next morning to find Ralph on his back out in
the middle of the yard, mouth open, tongue hanging out and both
feet sticking straight up in the air. Buzzards are circling
overhead.
The farmer, saddened by the loss of such a colorful and
expensive animal, shakes his head and says, "Oh, Ralph, I told
you to pace yourself. I tried to get you to slow down, now look
what you've done to yourself."
Ralph opens one eye, nods toward the buzzards circling in the
sky and says,"Shhhh! They're getting closer."[p]

Yo, my friend;
I have not yet had the nads to do anything in a pot on the BGE. Hats off to your nads. The pics look outstanding.[p]I've always had probs with pork chops getting too dry...this recipe should help with that. [p]I frequently see "boneless beef short ribs" at my local grocer and have bought them for many things that I never wrote down. But they are well-ribboned and cook up great and could be a great beef highlight in your recipe. You and I seem to have the same culinary inclinations and I think you would like these particular ribs if you can get them. In the meantime, I'm definitely going to use them in your recipe. Thanks in advance!

all my lodge pots were moved to my new camp. cooking in seasoned cast iron is great for gumbos gravies and recipes with cream and cheese. anything with tomatoes i use the lecruset. if cooking in the low 300 range there is little to go wrong, however dont put a lecruset cover in at higher temps, the handle is plastic and i dont know how hot it will go. been thinking of making a brass handle for them but dont know if the thermal expansion of the handle would crack the enamel

right you are about the le creuset handles. . .not supposed to take temps higher than 300 - 350. .. to me, putting a lid on a pot in the egg defeats the purpose of putting a pot in the egg in the first place, that is, to let the food in the pot absorb some of the smoke from the egg. . .the only time i cover a pot in the egg is if it needs some "steaming" to get done, then i simply cover tight with HDAF . ....

there is only 2 things that i know of that ive needed a cover for. one is that a pot roast needs to be covered towards the end of a cook to get it to fall apart. the other is when making beans in a bean pot, they need to be covered for the first 3 hours or so, or they will just take for ever to cook. the only thing not to like about the lecruest is the fact that the handles are plastic, but i have not experienced a problem with them
