ABT's For Lunch

I had a craving for some ABT's about 11:00 and there's no reason I can't have them for lunch now that I'm semi-retired (Kept Man). They were very tasty, as usual, but HOT, yea! So hot they took the temper out of the knife that cut 'em. After a few tears and wind-sucking sounds, I managed to eat half of them. I'll manage to eat the other half later today. ABT's have got to be my all time favorite Egg food.[p]Spring "Sucking on Ice" Chicken

had that same craving at work today, ordered pizza delivery. jalepeno, bacon and cheese. next pizza on the egg gets sliced ABT's on it

Spring Chicken,[p]Yeah, I know that. I was going to fix ABT's at the Cub Scout campout last weekend, but my small egg was enlisted Saturday night in cookin a whole pork loin. The cub pack had brought two inexpensive smokers to reheat 5 whole briskets and about 30 lbs. of sausage. No room for a monster pork loin, so I moved my egg on over. I cut the loin in half and it fit on my raised grid with the sides just smooshing in. I rubbed it with Chef Wils Cajun spice and cooked it at 350 with hickory for just over an hour till the internal temp was 145. Lucky for me, Mrs. GrillMeister brought out my Thermapen and some raspberry chipotle sauce. The pork loin was a hit, but I never managed to get the ABT's cooked.[p]I think I'll do a Jerk Pork Loin for the Texas Eggfest. It's a lot O meat for the money.[p]Cheers,[p]Ed

What are ABT's? I have seen them posted a few times, but couldn't figure out what they are. Could you please explain and possibly give me a recipe to try.

Many variations. I like jalapeno peppers seeded and cleaned, a layer of cream cheese, little smokie, wrapped in thin bacon.
I like to cook indirect at 400.[p]CWM

ABT’s (Atomic Buffalo Turds) is an invention of some unknown person who should be knighted, if not sainted for his creation. It is an appetizer or full-meal, or tool used to impress friends, relatives and co-workers. It combines the flavors of the jalapeno pepper, cream cheese and bacon with an unlimited range of meats and vegetables, or even shrimp. It is limited only by one’s imagination. They can be flavor enhanced with a variety of spices, rubs, seasonings and smoke. They are usually served with mind-altering beverages but go well with iced tea, sodas and plain water.[p]There are many recipes and methods of cooking them as noted in frequent posts on this Forum. My favorite is to start with fresh medium-size jalapenos, cream cheese, Little Smoky Cocktail Sausages and thin-sliced bacon.[p]Simply cut the stem end off the jalapeno, slice it in half from end to end, scrape out the seeds and veins, fill each half with cream cheese, a sausage (or other meat), join the two halves, wrap in bacon, pin with a toothpick and cook direct at 350° with the bottom vent closed (or nearly closed – keeps down flareups). Turn and rotate the ABT’s occasionally to even out the cooking.[p]When the bacon is cooked, the ABT’s are ready. Let them set a few minutes or someone will burn their lip.[p]Here’s some tips I’ve learned by doing and from others: [p]I prefer to freeze the Little Smokies because the only thing that needs cooking is the bacon. The chilled sausage tends to keep the cream cheese from boiling out.[p]I also prefer to slice my ABT’s into three, bite-size pieces after they are cooked. Pin each piece with a toothpick and serve. It makes them much easier to eat and you’re less likely to find bits of cream cheese all over your floor. Plus, I think they go further this way.[p]Try some seasonings on the ABT’s. Lots of folks like the unique flavor of certain spices. Just don’t go overboard. ABT’s have a very good flavor of their own.[p]Wear rubber gloves while preparing if you are sensitive to peppers. [p]Finally, experiment with your ABT’s. Use your imagination. Fit the ABT’s to your tastes and lifestyle. Maybe make a few different kinds for your party. [p]Oh yea… Make lots of them. You're killing me, man! ABT's twice a day? Are you really sure about that?[p]Before I got married some people told what I would have twice a day, and I've been lucky when I experience it twice a year. Are you really telling the truth about ABT's?

I could eat'm for breakfast, lunch and dinner, but my diet just won't let me. In fact, I'm thinking of trying a recipe that substitutes scrambled egges for the cream cheese, and smoked sausages for the Little Smokies and serving it as a breakfast food. Of course I will need very large jalapenos or maybe even poblano peppers but I'm fortunate to live where those are readily available. I suppose I could call them "Jump-Starters" if they are good.[p]Spring "Can't Eat Just One ABT" Chicken
