Dinner For One...TRex...This is for You!

<p />Momma and Marina are out of town this evening, so I thought I'd try something different. It may be the best meal I've ever made.[p]I thought I'd try a stuffed pork tenderloin. So, I decided that I would stuff it with a mixture of: roasted poblano pepper, Portabello mushrooms and Monterrey Jack Cheese. [p]I bought a 3/4 pound pork tenderloin and pocketed it. I then filled the pocket with bits of Portabello mushroom, poblano and Monterrey Jack. I seasoned the inside lightly with Dizzy Pig Ragin' River, and sealed with metal skewers....seasoned the outside with Ragin' River, and let it sit.[p]Meanwhile, I took sliced Portabellos and marinated them in a light mixture of olive oil and Balsamic Vinegar. These were grilled along side the tenderloin during the last stages of the cook. [p]I seared each side of the tenderloin at high temps (650 - 700) for about 1 minute per side...then removed until I stabilized the temp at about 400. It was done direct with the grid in the normal position. Because of the stuffing, the temp is not real constant, but I tried to pull it too soon rather than too late...about 140 -145.[p]It was beyond my expectation...sorry there were no witnesses...at least bipeds. However, Honey frequently walks on her hind legs, and I'm sure she would have loved it.[p]Happy Weekend![p]Mike[p]http:sp2.jpg

    Yo Mike,
    Just got back from the cruise this afternoon. I was sorry and happy at the same time to see not one single egg in Puerto Rico, St. Thomas (That's where we're going to be business partners someday...you promised), St. Maarten, Antigua, Barbados or St. Lucia. I'm tellin' you guys, the Caribbean is WIDE open! They eat the food like you showed, but they don't know how to cook it!!!!We gotta get the plan goin' with Spring Chicken before we miss out on our piece of the pie out there in paradise.
