Big Bruce, the absolute best way in my mind is to take it off and let it rest wrapped in foil for about an hour. Then put it in a FoodVac bag and vacuum seal it with your food vac. Next day drop the entire bag in boiling water and let it heat up. Cut the bag open and slice.[p]Second best is just to wrap it tightly in foil and put it directly in the refrigerator. Next day put it in a 300 degree oven for about an hour or so. Unwrap, slice and enjoy.[p]Either way you should have some good eats.

Big Bruce,[p]Best suggestion that worked for me was to put it in a shallow pan at 300 degrees for 2-3 hours. The kicker is to pour one can of regular Coke in the pan. You don't taste the Coke, it adds mositure and a little sweetness. Lastly, I wrappped tin foil over the pan.[p]Howard
