Brisket Question

edited November -0001 in EggHead Forum
I am cooking the brisket tomorrow but won't be eating it until Monday night. What and where is the best way to store it after i take it off the grill? What is the best way to reheat it so that it retains that right off the grill Quality?

Big Bruce, the absolute best way in my mind is to take it off and let it rest wrapped in foil for about an hour. Then put it in a FoodVac bag and vacuum seal it with your food vac. Next day drop the entire bag in boiling water and let it heat up. Cut the bag open and slice.[p]Second best is just to wrap it tightly in foil and put it directly in the refrigerator. Next day put it in a 300 degree oven for about an hour or so. Unwrap, slice and enjoy.[p]Either way you should have some good eats.

  • Big Bruce,[p]Best suggestion that worked for me was to put it in a shallow pan at 300 degrees for 2-3 hours. The kicker is to pour one can of regular Coke in the pan. You don't taste the Coke, it adds mositure and a little sweetness. Lastly, I wrappped tin foil over the pan.[p]Howard
