1st Attempt Pork Loin Roulade

Decided to try my hand at making something different for the family.

Went with a pork loin roulade.


Started with 2 unseasoned 1.5 # pork loins.

I used Classico Pesto the Basil(green) jar. Used about 1/3 of the jar between both loins.

Then added prepared stove topped stuffing with cranberries. My wife made the comment that when she eats pork she shouldn't be biting into fruit. I beg to differ, so I guess next time I'll be picking out the "fruit" from her loin.
Next topped it all off with mozzarella cheese, 3 oz per loin.

The rolling and tying was an adventure, I learned a few things for next time. And I learned a few things not to do next time.

All in all, it was a neat cook, and tasted real good. I'll be making this again sometime soon.
