My 1st attempt at beef jerky. Planning on picking up a piece of top round, i have the high mountain seasoning. From the directions it says cook at 200 for 1.5 to 2 hours.....seems long to me. Any advice?[p]Also, any suggestions on type to wood chips to add?[p]Thanks!

    <p />David,
i try to hold temps below 170, actually keeping temps at 150 for most of the cook. depending how low i can keep it on a given day, 4.5 hours to as long as 8 hours. use small pieces of lump from previous cooks and use a piece of metal instead of the daisy, with a brick on top, just barely open. i cook it direct and start checking after 4.5 hours. the picture shows jerky made from a bottom round, and some freshly caught salmon
