Appetizer ribs

I'm going to do ribs as an appetizer, I'm thinking I'll have a slab of St. Louis style cut in thirds lengthwise (like you'd get in a Chinese restaurant) then rub, smoke, and sauce in the usual manner. I'm thinking they won't take more than 2 hours to fully cook, has anybody tried this? Any thoughts on this idea?

Sorry man, never tried getting them cut like that, but it could work and reduce time. Not sure the bend test will still work like that.
I have done wild boar ribs for appetizers, much smaller and cook in less than half the time of BBs.

Why not make oriental ribs for a snack? Cutting in half or thirds works either way. Rub with char siu seasoning and they will be great. Spritz with a little soy sauce, water and apple cider vinegar 1/3 each.
The red ones are oriental.
This is the seasoning I use. Most any oriental store has it.
