On Monday I ordered a temp gauge for the Mini. Rec'd it yesterday afternoon along with the requested BGE brochures for handing out at a rib and chili cookoff. Thanks![p]I will be doing bacon wrapped shrimp on the Mini for appetizers. Other than DP Tsumani Spin, any suggestions for rubs? On the shrimp, on the bacon, or both?[p]Thanks, Rum

I like your idea of bacon wrapped shrimp. However, how do you avoid overcooking the shrimp? It's been my experience (with ABTs) that it takes quite a while for the bacon to get done and I would think that it would result in the shrimp being overdone.

What has worked well for us is to use "regular sliced" bacon rather than "thick sliced". We use half-slices on our ABT's, so we cut the bacon in half lengthwise. Then we separate each piece into two chunks. Bring a pot of water to a boil and drop in one of the bacon chunks: when the strips begin to separate, remove them from the water to drain. This par-boiling sets the fat, making the bacon easier to work with. It also partially cooks the bacon enabling a shorter time till it's fully cooked on the Egg.[p]HTH

Now thats a good tip. We made some bacon wrapped shrimp for Easter and the shrimp got to done because we used a thicker bacon. I've always tried to use the thinner bacon, but this time we only had thicker. I'm thinking you could use this idea for ABT's also. See-Yaa

Steve,[p]I can do you one better than that. I called the BGE Store in Atlanta Monday morning with an order for an 8" baking dish, extra grate for my small and some alder wood chips for smoking. I told them I needed it quickly and they immediately faxed the order in for processing. I had my package Tuesday afternoon and we did not have to pay for expedited shipping. Steve, I like to quickly marinate the shrimp in Mrs. Dog's Jamaican Jerk Marinade, Myers's rum & a bit of orange juice concentrate. Like Ken, I also use half strips of thin bacon. JCA
