Any suggestions for my first chili competition?
Hi All![p]Never entered any cooking competition before, gonna do a chili cookoff April 15. Just a fun thing with a bunch of Americans living in Nassau, Bahamas to raise $ for our commisary.[p]I was thinking about maybe adding smoked pulled pork at the end of a basic recipe. Of course, there will be Dizzy Pig involved![p]I would be very grateful for suggestions and/or recipes. Thank You, Jo

I have a chicken chili that has never lost a competition...EVER!!![p]However, since you already said you were going to add pork to it, you would definately be better off using an all bean recipe. Adding pork to a beef or chicken recipe just doesn't seem right!!!

Captjo, use several different varieties of peppers and smoke them on the Egg prior to putting in your chili. I also like mixing some Breakfast Pork Sausage and Italian Sausage (both pre-cooked and drained) in with my regular meat. Adding chopped/pulled pork is a treat that will add good taste to the end.[p]Here are some pics of a couple customers enjoying the quarter pound chili dog......
