Just checked my butt and the dome temp was down to 195. The fire went out! However, I started my butt @ 5:00 pm yesterday and I watched it till about 1:00 am. Held the temp to 250 that whole time. I have the fire back up and going and the internal temp of the butt was 167. Will this effect the cook or am ok?????[p]This could have been avoided if I would have taken the time to build a better fire!!!!

    195 is absolutely fine, even if your fire was completely out, it wasn't for long, and the butt is still cooking at that temp. You may end up going a little longer than you planned, but not much. If you had the temp hold steady from 5 pm to 1 am, the problem isn't the fire you built, you're better off getting up early than staying up late to keep an eye on things. I tend to have most temp control problems right around day break due to rapid shifts in atmospheric conditions that occur at that time of the day. [p]Cheers,
