Got filets tonight, then headed to Sams on Sat. to see if I can find some of those nice beef ribs. Forgot who cooked them and posted but they looked great.
Easter Bunch Sunday then just a few snacks later in the day like, crab stuffed mushrooms and honey bbq grilled shrimp.

    got a nice tenderloin roast i might butterfly and stuff with the pancetta/mushroom mix tomorrow. ..[p]easter sunday. . .dr. chicken's double smoked ham, [p]and i saw a great recipe on tv for cornbread mashed potatoes. . .basically, mashed taters (w/butter/milk/cream), then crumble cornbread into it till you get the taste you want. ...sounded great. . ..[p]add grean beans, green jellow mold.. outa be a good meal. .. [p]happy easter right back at you and the girls... .hope its a peaceful one. ..

    I was thinkin about manicured finger tips, but I couldn't decide what to color the nail so fajitas tonight. Gonna play with some bread tomorrow so maybe i'll get to suff something with crawfish. Also doing a ham for Sunday. Maybe by then I'll have figured out how to do the finger tips.

    Car Wash Mike,[p]We're going out to dinner tonight, so no egg food :([p]Haven't decided on tomorrow's cook yet, but we're probably doing a rack of lamb on Sunday. Still have to decide all of the particulars like what rub/sauce, what sides, etc. I'll probably sit down tomorrow and do a bit of recipe searching and planning. [p]Tonia

    My wife just came home with key limes and a big smile. I know what she wants--- my famous key lime meringue pie.[p]Don't know what to cook on the egg for Sunday yet- I'll tip the freezer and see what falls out. Happy Easter!

    Man, I'm coming to your house this weekend! I got "told" that I'm to show up in St. Augustine with two smoked turkeys at about 11:00 AM on Sunday. So I'll be busy Saturday night.

    A light brine I use,[p]1 cup kosher salt
    1 cup brown sugar
    1 gal. fresh water
    1/2 teaspoon fresh cracked pepper[p]That's the ratio. Cut this in half for smaller meats.
    Heat this brine on the stove untill it's dissolved, cool and then it's ready. You can add spices to customize the brine. Hot pepper, garlic, bay leaf, pickle spice, - depending on the meat and your taste buds.[p]Your a little late for tomorrow's cook so "Inject, Inject, Inject!" He he he he. Happy Easter. (Don't tell anybody but I ate the Easter bunny. Rabbit fricaseeeeee.)
