  • egg2d2,
i do a pot roasted brisket all the time. ..should work the same for a chuck roast. ..[p]take the meat, salt and pepper (or something like dizzy pig cowlick - but as a seasoning, not a full rub). ..put it in your egg at 250 degrees to smoke for one hour. . ..then put it in a pot. . ..cover about 2/3 up the meat with a hearty burgundy wine. . .sprinkle a packet of liptons onion soup mix on top of the meat. ..put the pot in your egg, uncovered for one hour at 350 degrees . . after the one hour, add baby carrots and pearl onion, add some more wine if need be to replace what has evaporated, and seal the pot tightly with aluminum foil (and i mean tightly, you want no steam escaping)....leave in the 350 degree egg for 2 more hours. .. . works great for brisket.. outa work ok for chuck as well. . .
