Texas Steak Cookoff on Food Network

Just watched the Texas Steak Cookoff on Food Network. It was held in Hico, Texas. Interestingly, they first narrowed the field down to 10 and then gave them more steak to cook. Then they narrowed down to the top four.

Also interesting, to a cook, they all wanted to cook at lower temps than Eggheads would use, At least one cooked at 350. And they all wanted to keep touching the meat: moving it around on the grid, pressing it down and even turning it over multiple times.

The final judges were people with considerable experience in the beef industry.

The cooks all tried to cook to medium rare because by the time it reached the judges it would have continued cooking to medium, supposedly what the judges were looking for. Most appeared to be medium well to well. And some looked disgustingly dry and tasteless.

I think most Eggheads could have scored well in this contest. I don't comptete so it has to be someone else nesxt time.

    I have seen that contest before.Good Lord willing,I will attend someday.The city provides the meat(steak-Ribeyes) they only ask that you cook several dozen to feed the crowd.You keep the "cream of the crop" for the comp and festival attendees eat the rest.Kinda like an eggfest but they furnish the meat to keep the playing field equal. ;) On another note,I got scolded on another forum for suggesting to pull a rib Roast at 125 IT and letting it rest 30 mins before slicing.I was told that it would be OK if you were an animal that liked RAW meat! :S :blink: :laugh: That guy that thought up Neopolitan ice cream must have been really smart.Something for everyone.All he did to me was ruin 3 ice creams at once. :laugh: There is only ONE ice cream,vanilla,you can turn it into whatever flavor you want/like.Like Apple Pie! :whistle: :evil:

    I am not sure what year you watched but this years is Sat the 21st ......we are torn between goin to it or heading to Athens. We have been tossing around the idea of cooking at next years event and will be trying out some different things on the egg in preparation!!
