    Jopa,[p]Yep, we just finished another batch of shrimp on our new demo medium egg. These were marinated with a sweet pineapple and chili mixture and then tossed in an orange chipotle sauce from Petty's in Melbourne (MMMMMmmmm! - Thanks Ken and Diana!). I also roasted some sweet bell peppers and did a pepper salad with balsamic and pine nuts, and some roasted portabellas with thyme.[p]I really enjoyed meeting you both and am looking forward to seeing you again next time! [p]Tell me more about the salad you had with the pork tenderloins? Looks like tomatoes, avocado, fresh mozzarella, italian parsley, and balsamic, but I would LOVE the specifics if you don't mind sharing? Looks FANTASTIC![p]Tonia

    Sliced tomatoes and fresh mozzarella sliced over basil. reduced balsamic vinegar for about 7-8 minutes and then added 2 T. butter. Let cool and pour over tomatoes. sliced avacodos and put on sides of plate.

    Yep I am one of the very lucky people to attend. Even better I live in Ocala. ( one of it's very few perks )I agree AHHHHHHHHHHWWWWWW the life of an egger!!!!!
