    Old Dave, One thing I thought was noteable. The meat was very tender. Most of the meat was coming off the bone. Depending on which way you cut the meat it was either a bit chewy or melt in you mouth. I did some fat trimming before hand. For my first time at this style they were very well accepted. Well my wife thought they were a bit too dark in color.
