sorry, no pics this time. ..had a whole beef tenderloin in the fridge, cut the large end off to save as a roast, and the tail for chili. ..the middle 8 inches, cut into 4, two inch thick filets, rubbed with olive oil and dizzy cowlick. . ..got the large blazing hot (i love it when the temp guage needle is pointed straight down!!). ..trex seared for 2 minutes per side, then while they were resting and then dwelling, made up some pancetta/mushroom mix.. .. i found some oyster shrooms (thanks to woodoggies for turning us onto to those gems, they are unbelievable),. ..in a pan, sauted up the pancetta, remove and save, then the shrooms, green onions, shallots. . .a splash of white wine and cooked it until the liquid was all gone. . add back the crisp pancetta. . .served with the steaks and baked potatos. ..our eyes were just rolling to the heavens. . .. great dinner. ...
