beef cheeks ala egg

Was in Yuma over the last week and found beef cheeks at the local wal-mart. Browned them in a Lodge pot then browned a bunch of onion and garlic. Added beef back to pot with a cup of brandy. Flashed it off and added half wine and half chicken broth to almost cover checks. Added salt and pepper. Broght to boil and placed in egg at 350 dome. (uncovered) After an hour, I rolled meat, added a bit more wine and covered with parchment under cover. Let cook two hours more.
WOW, is that rich. Wonderful meal. Should've have trimmed more fat prior to cook. Ths is a tasty but clogging feast.
