Staff meeting St. Pat's Day Brisket lunch

Morning All:[p]I was asked to make the meat for today's staff meeting lunch. Since it is St. Pat's day my first thought obviously was corned beef. I didn't want to buy the "prepared" corn beef that I have seen in Sam's, but do my own using a brisket. Unfortunately I was never able to find any Tenderquick anywhere in the Tampa area (waited too long to order from Morton over the internet). So I just went with a basic brisket. Stopped at Sam's on Tuesday evening and found two decent looking flats; one at 8.03# and the other at 7.38#. Needing to feed 15 people (10 men, 5 women) I didn't think one would be enough even with the sides being brought by others. [p]Tuesday evening I trimmed both slightly. Then on one put turbinado sugar & DP CowLick and the other got turbinado sugar & BlueSmokes Wicked Grin. I only currently have a medium egg (pick up a large Saturday at the Florida EggFest), so I had to get creative to get both briskets to fit in the Egg. I tried two or three different arrangements, but ended up using platesetter, feet up holding the drip pan, then the regular Egg grid holding one of briskets. Then I used two small pieces of firebrick to support the grid extender holding the other brisket. This picture is right after I got everything on, there is just a small air space between each brisket and the dome just does close tight enough to hold a seal.[p]
[p]These started at about 10:00pm last night at a dome temp of about 200F. I got up at about 2:30am and the meat temp was about 150F and the dome at 225F. Since I am normally up each day at 5:00am I first checked on the Egg and the meat temp was about 170F and dome 230F. At that point I decided to take the dome temp up a little and change positions (moved the one on top to the bottom and vice versa) to make sure there was even cooking, then decided to go back to bed for another hour. When I got up a little after 6:00am, meat temp was now 185F with dome at 275F. I decided to pull them off at about 7:00am, wrapped in aluminum foil & old towels and put them in an old styrafoam cooler for transporting to work.[p]Here are both of them just before wrapping.[p]

[p]Lunch was to start at 11:30am so at about 11:15 I opened the cooler and could hardly take the foil packages out without burning my fingers they were still so warm. Sliced them up...[p]

[p]and all enjoyed a great lunch. There is just enough left for a couple of decent size sandwiches for tonight's dinner! [p]Have a GREAT day!

great pics. .. . probably tasted much better than any corned beef you could have made. . .and heck, if they were trully irish, they were too drunk to know the difference anyway .. .
