Spatchcock chicken question......
WVU-Egg
Posts: 101
anyone ever take the skin off of a spatchcocked chicken before egging? I've always done them with skin on.... I don't want to mess up a perfectly good chicken. For some reason I have this belief that it stays jucier with skin on while cooking. Right or wrong?[p]Thanks

WVU_EGG,[p]The half-a-dozen or so times I done spatchcock chicken, I have left the skin on with good results. I have lifted the skin and applied seasonings of one form and another, though. However, each was juicy and tender.[p]Cajun
