"Best Steak Ever"

Direct quote from the Mrs. last night. When I bought the egg for my 40th (wasn't that nice of me?) she had her doubts. She has actually enjoyed almost everything I cooked on there since I made my purchase. And one of her favorites is Spatchcocked chicken and she was NOT a big chicken fan before the Egg. She will now eat the chicken and take some leftovers and make some chicken noodle soup with it.[p]But last night she bowed down before the EGG and praised it for the steaks it delivered.[p]Took some filets and just vacuumed sealed them for a few hours. I read about this possibly tenderizing them so I thought I'd give it a try with the Foodsaver. Then my 5 year old daughter and I, who loves to help, rubbed sea salt, Kosher salt, crushed pepper on them. Then just put some Billy Bee's honey mustard on them and some basil olive oil. Just did the TRex method and seared them at 750+. That EGG was a blazing. Then let them rest for 20 and then cooked the rest of the way until 400 for medium rare.[p]I have used a cast iron skillet before on some filets due to the lack of fat on them but I think I like the direct approach so far and just searing them. One thing about the rest period is that it just gives me time to fix the other things. So I'm not sure the 20 minute rest is necessary but it sure does make the timing of everything better AND it allows me to grab a few beers during this time.[p]Also, threw some asparagus in the Egg while cooking the steaks and they can out well. Just put on a flat tray and sprayed some Pam on them and then just put parmasean cheese on them. Cheese came out all nice and bubbly and somewhat brown. So they were PERFECT.[p]Thanks to all of those who are always providing tips, recommendations, and the constant message of keep trying different things!!

    WVU_EGG,[p]You know, now you'll never be happy with steaks at a restaurant again. [p]Let's say it's a GREAT steak (probably not as good as yours). The atmosphere may be wonderful, they will do all of the work, but when the bill comes, you will be pissed off.[p]I cannot remember the last time I ordered a steak. Must have been 4 or 5 yrs ago.[p]Next time, cut a small pocket in the fillet. Stuff it with some blue cheese or feta cheese. Cook the same way. You'll think you dies and went to heaven![p]Smokey

    I was in Vegas about a month ago and I did order a filet from the restaurant in the hotel and they had stuffed it. Of course the company I work for was buying. But it was stuffed with feta and then they had laid the filet over some mash potatoes that had been grilled probably on a cast iron skillet. So basically they were somewhat crispy on the outside but mushy in the middle. It was actually quite good.[p]But I do plan on stuffing the filet one of these days. I had another filet in Tucson last week that was stuffed but they only put mushrooms in there. Just not as tasty. Would rather have my shrooms just sitting to the side.[p]And I had a steak at Bone's in Atlanta about 2 months ago. The ones last night were a lot better! And Bone's is known for their steaks.[p]Ron
