do you mustard& rub the ribs ...

dam i just told my friend to mustard the ribs & rub use the Head Country seasoning, ala pork butt i guess that was stupid, i have made soo many butts in the last few weeks, i was not thinking [p]what will it taste like with a 3-1-1 cook time ??[p]
its too late to call back ![p]

    BillyNJ,[p]I'm sure it will be fine. Althought I'm not a big mustard slather fan, a lot of people swear by it. Head Country is an excellent rub and works well with ribs. 3-1-1 cook time sounds good, I'd check for tenderness at the end and not go strictly by times however.[p]Rick

    Am not familiar with that rub, but I slather mustard on the ribs quite often. In fact, that's my preferred method. When I don't use mustard, it's only because I'm in a hurry and want to start drinking; or because I'm feeling lazy and want to start drinking; or because the egg has already been going for awhile and somebody better start watching it and you can't do that without drinking.

    BillyNJ,[p]I'll tell you what I think..and why not..I'm a Stump after all..and if'n I wasn't a Stump..well then..maybe I wouldn't tell you what I think..mostly on accounta it'll prolly be too close to what other folks think...an there ain't no fun in that..specialy if'n I'm a stump...hmm..where wuz I ...oh yes..them ribs..did I tell you how good them Molson XXX beers is..man..I think maybe I been to heaven..and it done felt like somebody met me there and gave me some fine angora undies and a feather duster...an a dozen or so wet naps....I'm laughin in places I thought I'd never laugh....and nobody even done touched me...sheesh..ain't rite..ain't rite at all..but who am I...I mean really who am I.. giggle..giggle.. tee...hee...tee...heee..oooohhh...ooooohhh....[p]I think...truth be tol..it all depends on what kinda ribs they is...not the mustard thing..cuz I gotta figure if'n folks wanna rub mustard on somethin..who am I to stop them..I mean if'n they is all covered in yella and the ribs got none on em....it don't mean MY pipe isn't gonna light in the mornin....know what I mean ?....but regardless of that...here's what little I know now what I didn't know maybe 3 weeks ago..or maybe before them angora undies got a hole of me..that 3-1-1 or whatever method is only gonna work in mine house ever again if'n I'm doing baby backs....I done found out last week..that if'n they is full pork spares..they don't need no foil...and they is gonna go in the egg..with that egg workin it's magic all by its lonesome....way I see it..based on the last coupla cooks I done..and the fact that I done found full pork spares..trimmed right..last coupla trips to the piggly wiggly..them spares got lots more pork fat then them baby backs..and can take the outright cookin with no foil method..but the baby backs I've been able to get my hans on...been way to lean..now you gotta unnerstan...I'm a Stump..an angora wearin stump..but a Stump nontheless..and maybe is jus what ribs I been gettin frum the piggly wiggly..but them babybacks get all dried out or whatnot if'n they is not wrapped tightly (as if I'm one to judge about somethin wrapped tightly) in foil..but them spares..man alive..I think I'd trade them angora undies for maybe a half rack of spares cooked with no foil..provided I spose I can still wear them undies while the ribs wuz cookin..I mean a mans gotta wear sumthin..[p]
    Mustard'll be fine...its the undies I'd me most worried bout.[p]StumpBaby

    You hit on something I have not been able to do. I cannot get a rack of spares to come out right at all, but yet, I have never wrapped a baby back in foil, let alone invoked any kind of ritualistic cadance (i.e. 3-1-1, 5-2-1, 4-5-7, hike) during any rib session. I do usually use liquid in the drip pan (Dr. Brinkman taught me that method). Bottom line; I'm happy with my baby backs (about 5 hrs at 250 dome) but those buggers are expensive these days and I'm thinking of trying spares again, but never had any luck with them. What can circus folk do with spares once the main show in the big top is over? I live near Baraboo in case I need to get circus supplies.
