First, this is a variant of Mr. Toads recipe using pork tenderloin instead of the plain loin. Awesome. It was cooked 2 weeks ago, but I have been having internet issues. Tonight is my first night back in a while![p][p]Second, this picture is dark, but you get the jest of it. Tender and juicy.
[p]Lastly, this was the slab of spare ribs for tonight. Incredible after a coating of mustard, Raging River, and honey. 2 hours indirect over a drip pan, 250F, and two hours in foil, 325F, followed by a sear with Q-sauce for 15 minutes or so. Sorry no photos of the finished product, Mama was restless...[p][p]Thanks for your patience as I learn the multi-pic thing![p]Scott
