marbling was more like veins!

These two puppies were from a sub-primal I had dry aged for 35 days. What struck me odd was the fine veins of fat in the marbling.

I hot tubbed them for an hour and then on for a 650° sear for 3 minutes in total of flippin and turnin.

These steaks were very tender and tasty.
