That should have been on the breakfast menu on the ship. But then everyone would have wanted it. Then what would they have done with all the leftover crabcake eggs benedict?

Egg was 375 dome with the skillet in it when I dropped the onions in. Just a few minutes for the onions and then everything but the cheese went in. I would say 10-15 minutes until I put the cheese in and then another 5 minutes after adding the cheese.
I just shake the pan:
If it jiggles a lot, I hold off on the cheese. :P
If it jiggles a little, I add the cheese.
When it stops jiggling I take it off. :laugh:

My favorite is a crawfish boil fritata. Leftovers from a crawfish boil plus some other stuff.
