yup I just buy the bag of 5 loafs in the freezer section of the grocery store. in the am I take one out rub with evo and put in a ziplock bag and back in the frig to thaw. when I get home from work it goes on the counter to warm up a little so it is easier to roll out and handle. i just use a little evo on the counter to roll and shape.

Is it a sourdough french bread or more of a soft sandwich bread dough?

either one will work
we have the lovely choice of 1 kind up here LOL I have even used pizza dough and it was good
most of the time the whole idea is to just go with what you have and use up left overs with enough cheese that it is good :laugh:
