corned ribs

a small butcher shop near me corns their own meat, very good corned beef. today they had corned beef ribs, anybody ever have them, and how would you prepare them. was thinking that they would need to soak, maybe a parboil, and then maybe a 311 method with a strong sugar glaze. i didnt buy them yet, it just thru me off looking at them, now i dont know if i should go back

being corned like a corned beef, i know they will be salty.just throwing out some ideas as how to remove that salt content prior to cooking them, and maybe how to cover the salt taste with a sugar glaze. ive never thought to parboil a rib before, but those are my reasons. my favorite rib method is direct, raised grill, 220 degrees as i find the 311 method to be too mushy. as for these ribs, they wont be available after next week and if i dont try them, i will be wondering about them until st pats day next year

went that route, they boil them with the corned beef. the corned beef is lightly cured, cooks to a slight pink, not the typical dark red. it makes a descent pastrami if smoked with lots of garlick. i seem to ask butchers here uncharicteristic questions about pieces of meat at these places and they dont know how to respond.not alot of low and slow bbq going around here. live 20 minutes to boston and most places dont know what a boston butt is.

im sure to get them, just dont know when to cook them. dont want anyone else to think i cant make ribs, might have to closet rib these things late at night into the morning and get them down whilst no one looks. if they are good then i can come out of that rib closet

I didn't soak or anything, just put them on as is. They turned into salt-encrusted bones and I couldn't do a thing with them. Something has to be pretty bad for me to throw it away, too.[p]The next time, I used them in a New England boiled dinner instead of a corned beef, as my friend's mother makes. Good, but still pretty salty.[p]I'm guessing that you need to soak them and keep changing the water at LEAST overnight. If you cook them low and slow, please post how they turned out.[p]Lee
