Little help with chicken wing temps and time.

Hey guys,
I am doing some wings this weekend. I've done them before and they came out great, but I can't for the life of me remember the cook time and temps. I did this cook with wings and chicken legs a while back. I believe the recipe I found had me do them direct at low temp, something around 250. Flipped the chicken every 20 minutes or so for 2 hours, saucing at the 2 hr mark for 10 more minutes of cooking.
I believe that is what I did, but can anyone confirm the recipe?

sounds about right. i do thighs at 275ish for about 2 hours, wings a little hotter, 300 for a little over an hour. both cooks direct on a raised gridfukahwee maineyou can lead a fish to water but you can not make him drink it

For me I like using my AR with the grid extender and grid. I go 400F direct. I watch them and turn as needed. I like the skin crispy so I let it cook a little long. I know I cook them past 170F. I don't remember the timing.

Mud Pig, I just cooked 120 wings. Cut the tips off and seperated the drumette from the thingamajigger. I followed fishless' advice. Cooked them with very little lump at the grid level (would have used raised grid, but had a ton of wing pieces to fit on), direct at 300 - 400 for about 45 minutes. They were nice and crispy and moist.
Now I only have to cook 180 to 280 more wings for my niece. I know what I'll be doing this weekend. -
Good grief Rebecca!! Another couple hundred or three? :laugh: Honestly though, do you have access to a Restaurant Depot? They sell the wings already separated drumette and flat (thingamagig...). Last time we got them they were $1.08/lb for a 40 pound box, and the butchering is already done. Just trying to help. :silly:

i do wings direct at approx 375....on a raised grid..usually on for hr... i flip some and rotate grid some...

My sister insisted on organic chicken wings from our local grocery. However, I'm bailing on that plan. I'm going to hit the Restaurant Depot in Cincinnati this weekend. I don't think my sister will notice.
