I am a new egg owner. How is the best way to get the temperature low, like 225 - 250 and keep it there?

    The short explanation is to approach your target temperature from below. Let the temperature rise as the fire builds, but then start shutting down the vents as you get closer to your target temperature. If you let the ceramic heat up by allowing the temperature to get too high, it can take a long time to get the temperature back down to where you want it.
